Farm-to-Table: Slow Food in Denver and on Campus

How can sustainable agriculture cultivate taste? In a 3-week intensive with variable credit options we will learn about the basics of sensory education in relation to farming systems that produce flavorful and nutrient dense food. Our six-day, 7-night field study at the Slow Food Nations Conference (Denver CO July 14-16) will include visiting alumni food producers in the Denver area. Student work will involve reading ( Farm to Table, Slow Food Nation, and Taste What You're Missing) , writing, tasting, field work and web-based documentation, and a final presentation. A second variable credit option involves independent work on a late summer farm-to-table fundraising dinner for Evergreen. To register for this variable credit option, please contact the faculty.

This intensive will meet 1-6 pm on Thursday and Friday, July 6-7, then re-convene in Denver for a field study beginning 10 AM on Tuesday, 11 July through 10 AM on Monday, 17 July. A final meeting will take place on campus Friday, July 21, from 1-6 pm.

Students will be expected to arrange their own transportation between Olympia and Denver depending on their individual needs and preferences, which could include individual or group travel by car, bus, train, or air.
Fees
$495 to cover conference registration, travel within Denver, and food testing activities.
