This four-credit course focuses on experiential and community-based learning that requires students to complete an internship with a local food justice organization. In the first few weeks of the quarter, we will present the various internship opportunities to students, learn about how to show up respectfully and with integrity in the community, and go through the administrative process for setting up the internship. Students will be expected to start their internship by week 3 (or sooner if possible) and will be required to complete between 75 and 100 hours of internship work by the end of the quarter. Students will do a class presentation on their internship experience in week 10. Internship sites may include organizations like Garden Raised Bounty, the Thurston County Food Bank, Salish Roots Farm, and Farm Rooted Education for Sustainability and Health. Students will need to be located in the Olympia area and have access to local transportation (either the bus or a car) in order to complete their internship.
